Chef form Veliko Tarnovo patented goat milk white – brine cheese with truffles

The Executive Chef from Veliko Tarnovo Stanimir Radichev patented the only goat milk cheeses with truffles in our country.

Why goat cheese and why with truffles? You may think that the recipe belongs to some exquisite French cook, but you will be wrong.

It belongs to chef Stanimir Radichev and was fully developed in his third attempt.

How the idea was born?

The idea was born spontaneously, it is not a product of a long – standing dream.

 “It is a strange story. I was asked by a friend of mine to cook for his gathering. As we started to set the table, one friend brought goat milk cheese from the Sevlievo region, and another added some truffles from the Ludogorie region. That was when the idea suddenly occurred to me and I offered them to make goat milk cheese with truffles.” chef Radichev explains.

His friends embraced the idea and offered to provide the raw materials – goat milk and truffles. The chef`s task was to master the recipe. First, second, third attempts and there was – the unique product with no equivalent in our country. It takes 33 days for the cheese to age.

What happens next are the continuous talks with several dairies, until the Dairy in the village of Davidovo, Targovishte region, agreed to produce the cheese with the stipulation that the raw materials will be provided. The milk is produced by M. Georgiev`s 189 goats herd from Lovni Dol, Sevlievo. The truffles, on other hand, are harvested from the Ludogorie region.

The delicious cheese is an exquisite and different product, that could be found in boutique chain restaurants and shops. This is a real uncharted Bulgarian taste. Everybody knows that the goat milk, that traditional, but slightly forgotten Bulgarian product, has significant health benefits. And if you think that truffles were found only in France, you are wrong. It is a little – known fact that in the Bulgarian forests those mushrooms grow en masse.
