Chef Radichev launched on the market dried goat meat sudzhuk with truffles. The product is in stock within two to three weeks. Many Bulgarians, as well as foreign visitors at the latest Annual Food Exhibition had already appreciated the product.
“My product was verry well received at the exhibition. I even heard that there were some people who were angry, because they couldn`t try it. Some Italians were fascinated with the cheeses with truffles and the sudzhuk. They couldn`t
Believe that there were such Bulgarian products.” Chef Radichev explains for Radio Municipal. The goat dried meat sudzhuk is with three type of truffles – 2/3 are white truffles, that give strong and rich flavour of wild garlic, herbs and grasses. Chef Radichev integrates this expensive and specific mushroom into the meat and dries it in special dryers. After two weeks the product is ready.
“The original idea of a sheep dried meat sudzhuk had dropped. For that product I needed even more documents and special dryers, and I haven`t yet gotten to the point where I can make them myself or have someone make them for me. I made the goat dried meat sudzhuk for personal consumption, I knew its taste and how to make it” the chef adds. In recent days, there are truffle and saffron butters among his unconventional ideas, that already are turned into a reality. The saffron is from the village of Slavyanovo, Haskovo region. During an exhibition, a lady gave the chef a small box of the precious crocus. He decided to give it a try and the outcome is both impressive and exotic.
Chef Stanimir Radichev offers 18 different products on the market. If we include the different packaging, they are over 20. Among them are cow and goat milk cheeses with truffles, sheep milk cheese with porcini mushrooms, red hot chili peppers jam with goji berries and pumpkin seeds, red onion jam with red wine and rosemary, duck meat terrine with foie gras and truffles, etc. 90% of his products are unique and exclusive for Bulgaria. Like his new product – the dried goat meat sudzhuk with truffles, perhaps unmatched in the world.
